Quick Hungarian Fánk

Hungaruan Fank

Ingredients:

  • 250g rice flour
  • 2 eggs
  • 1 pocket baking powder
  • 280g yoghurt (or 50% sour cream, 50% yoghurt)
  • 2-3 tablespoon sugar
  • Oil (for frying)

Method:

Mix the ingredients!

Put the oil in a heavy-bottomed pot and heat it. Make small balls of the mass and then put it in the pot. If they are ready they become gold. Serve the fánk with jam and powdered sugar.

In Hungary this is the typical dessert of the Carnival-period.

Lecsó

Ingredients:

  • 1 kg bell peppers (capsicum)
  • 500g tomatoes
  • 1 large onion
  • 4 tablespoon oil
  • 1 heaped tbsp ground paprika
  • Salt

Instructions:

Remove the stalks from the the tomatoes, peppers and seeds from the peppers, and slice them. Finally chop the onion and fry in the hot oil, stirring continuously, until translucent. Remove from the heat and stir in the paprika.

Add the peppers and salt, and cover with a lid. Simmer gently for about 10 minutes, then add the tomatoes and cook until soft.

Serve it with gluten free bread.

It can be prepared vegan or if you want you can also add egg (+salt) or sausage before the lecsó is done.
